Appetizers

COCKTAIL MEATBALLS

Chili sauce, grape jelly and frozen pre-cooked meatballs.  Warm chili sauce and jelly together, brown meatballs, and add to the sauce. Add pickled jalapenos for an extra fancy flavor.

CHILI CHEESE DIP

Cream cheese, 1 can of chili and shredded cheese. Using a slow cooker or Dutch Oven, layer the ingredients and warm over medium heat, stirring often, letting everything melt together. Delicious just like this – or add jalapenos, cilantro, and lime to take it over the top.

RANCH CHICKEN DIP

Cream cheese, ranch dressing packet, cooked chicken. Blend ingredients together in a food process and serve as a dip or spread with crackers and bread.

PIGS IN A BLANKET

Refrigerated biscuit dough and cocktail sausages. Divide and flatten the biscuits, placing a cocktail sausage in the center of each. Roll and bake at 350 degrees until browned. For extra zing, add dried herbs to the dough. Or add a slice of cheese underneath sausages before rolling. You can also drizzle biscuits with honey after baking or serve with BBQ sauce.

PESTO STUFFED MUSHROOMS

Fresh mushroom caps, pesto and bread crumbs. Spoon one tablespoon of pesto into each mushroom cap. Top with seasoned bread crumbs and bake at 350 degrees until warm. Add an extra “wow” with shaved parmesan cheese or crumbled bacon on top.

BAKED BRIE

Brie cheese wheel, pepper jelly and fruit. Place the brie in a 350-degree oven for about 5 to 10 minutes until warm and partly melted. Top with pepper jelly and serve with sliced apples, cantaloupe or berries. You can also use your favorite fruit preserves or olive tapenade. Instead of fruit, serve with crackers or crostini.

MORE QUICK IDEAS

  • Stuff jalapeno peppers with cream cheese, wrap in bacon and bake until crispy.
  • Dress up store-bought hummus with a drizzle of olive oil and a sprinkle of chopped parsley.
