Fall in Love with These 3-Ingredient Pumpkin Brownies

It’s pumpkin season again. But if you’re living a Paleo, vegan, gluten-free, dairy-free or low-sugar lifestyle, the craze for PSLs and other sweet stuff may totally leave you out in the cold.

Still, there’s gotta be a way to enjoy something satisfying with that rich pumpkin flavor … something that doesn’t take all day to make with rare, expensive ingredients.

Here’s your alternative. This super healthy recipe calls for just 3 ingredients and it couldn’t be simpler to make. These flavorful brownies don’t use flour, butter, grains, granulated sweeteners or even eggs. You can whip them up in a blender or mix in a bowl. Frosting is optional, but if you love a fudgy treat, you’ll want to try it out.

 

A few handy tips:

If you like a stronger chocolate flavor, adjust the amount of cocoa. We used ¼ cup, but you can add more – or go the other way with just 2 tablespoons cocoa if you don’t want an overpowering chocolate flavor.

For dark chocolate lovers, ¼ cup Dutch processed cocoa plus 2 tablespoons of dark cocoa gives a really rich flavor.

These brownies aren’t overly sweet. If you want a sweeter taste, substitute very ripe, mashed banana for half of the pumpkin. This adds sweetness without overwhelming the pumpkin flavor.

 

FOR THE BROWNIES

  • 1 cup pumpkin puree
  • ½ cup soft, creamy almond butter
  • ¼ to 2/3 cup cocoa powder

 

FOR FROSTING (OPTIONAL)

  • ½ cup cocoa powder
  • ¼ cup coconut oil, melted
  • 3 tablespoons maple syrup
  • A couple drops of vanilla extract

 

INSTRUCTIONS

  1. Preheat the oven to 350 degrees. Coat a 4×6 or 6×6 loaf pan with cooking spray or oil and set aside.
  2. Put all ingredients into a high-speed blender or large bowl and mix until a thick batter forms.
  3. Transfer batter to loaf pan and bake for 12 to 15 minutes, or until a skewer comes out clean. Allow the brownies to cool in the pan completely before frosting or slicing.
  4. To make the optional frosting, combine all ingredients in a bowl until creamy. Frost brownies in the pan, then allow to sit briefly before cutting into bars.

These pumpkin treats taste great chilled. They can be kept up to 5 days in the fridge and are also freezer-friendly, making them a terrific make-ahead treat for the fall and winter holidays.
